Tuna Melt A Good Choice for Diabetics and
Others
If you’re looking for a change of pace when it comes to fish,
you want to try a “Tuna Melt” recipe which has received rave
reviews from diabetes educators.
Maria D. Gonzales, RN, BSN, CDE, a nurse and Certified
Diabetes Educator with the Diabetes Education Center at Valley
Baptist Medical Center-Harlingen, took home the tuna melt recipe
after finding it in the Diabetic Cooking magazine that she gives
her patients.
“This tuna melt is surprisingly tasty,” Maria said. “And best
of all it makes a healthy choice for a diabetic patient or
anyone who wants to be health-conscious when it comes to their
meals.”
From a distance, the tuna melt may resemble some kind of
open-faced cheeseburger – but of course without the beef and
with just a small portion of reduced-fat cheddar cheese. Here’s
the recipe:
Tuna Melt
Makes 4 servings (2 melts per serving)
1 can (12 ounces) chunk white tuna packed in water, drained
1 ˝ cups coleslaw mix
3 tablespoons sliced green onions
3 tablespoons reduced-fat mayonnaise
1 tablespoon Dijon mustard
1 teaspoon dried dill weed
4 English muffins, split and lightly toasted
1/3 cup shredded reduced-fat Cheddar cheese
Preheat broiler. Combine tuna, coleslaw mix and green onions
in a medium bowl. Combine mayonnaise, mustard and dill weed in a
small bowl. Stir mayonnaise mixture into tuna mixture. Spread
tuna mixture onto muffin halves. Place on broiler pan.
Broil 4 inches from heat 3 to 4 minutes or until heated
through. Sprinkle with cheese. Broil 1 to 2 minutes more or
until cheese melts.
